This typical most well-known sweet from Biella has an ancient origin. The "Canestrello Biellese" is also mentioned in a manuscript of 1805 which is stored in Royal Archives of Turin. It describes this biscuit as "excellent confectionery based on chocolate, respected and produced in many towns". Its composition is simply, but has an extraordinary taste: fragrant brown wafers with a dark chocolate filling.
